It has been over a year since I have posted something on here. I guess I just sort of felt like everything I was doing was really boring. Then life gets to crazy and you really don't have the time, its sort of a viscious circle, ya know? So, anyways...I am going to try and start up again and be a little bit better about keeping up with our life. I think that I am going to try and start a cooking blog. I have been really enjoying that lately and I guess that it would be something easy to blog because I am passionate about it and love it. Plus, now that our life is sort of in limbo I have a lot more free time to do the things that I love and that make life so happy. </div><div> </div><div>I am going to kind of give a little bit of back story to why I have so much free time on my hands.</div><div>In the beginning of Sept. Eric's company told us that they wanted us to move to Portland. We were really excited. They sent us up there on some fun trips and we checked out some areas and got a little bit more familiar with Portland. So, we got all of our stuff packed up a little early and when to stay with my parents for a while so that we could spend some quality time with the family before the big move. Well, several months have come and gone and we are still living with my parents. They have been really wonderful through all of this crazy commotion. </div><div> </div><div>So, what happened with his job was that they went through some wierd lay off periods and there budget got a little tighter than they had anticipated and so they put our move on hold for a while. We still have a job, so that is good. Plus, we have been able to spend a lot of time with our family and that has been really cool. I have had a lot more time to do the things I want to do. I am so so so happy. We have also been able to save some money, so that is also a happy thing , right? Gotta love that! </div><div> </div><div>So, basically that is our story right now. Time just flew by and definitely got away from me. 2009 was a great year. So many wonderful things happened. Some great memories were made and life in general was just great. I want to make this year even better than last year. So, I am going to start my year out with a bang!! Here are some new goals I have come up with for this year. They are as follows...<br /><br />1. No sugar until August.<br />2. Cook more really healthy food.<br />3. Work out consistently through out the whole year.<br />4. Start building up my running stamina.<br />5. Run some small races around SLC.<br />6. Run the 10k race portion of the spud man triathlon in July.<br />7. Make more memories.<br />8. Spend time with the family.<br />9. Be more patient.<br />10. Just have fun and Be Happy!!!<br /><br />I think I have some good goals, and some just plain scary goals. This is the year that I am going to really push myself to be healthy and live a better life. Life is good, don't get me wrong, but its always good to set goals, and push yourself. So, wish me luck. We have the spirit of giving. It is a time when we come together in love and service. Most of all, It is a time to celebrate our Saviors birth and life. He was on his way to serve a mission for the Church of Jesus Christ of Latter Day Saints. He would be serving in the Burmingham, England mission. I remember standing there that day watching him wave out to us from the airplane window thinking " This is going to be the longest 2 years of my life. It is going to be so hard to have him gone." Don't get me wrong. I was so proud of him, but I was going to miss him terribly. 2 years have gone by and I am very proud to announce that he is going to be coming home on Wednesday July 22nd at 6:00 pm. He has served so faithfully, and is definitely coming home with honor. It has been such an amazing experience for me to read his letters and to watch him really grow up. He is turning into such a great man. Yikes!I just called him a man! My little brother is growing up! Congratulations David!!! It is a really fun show and it has some truly amazing talent. This is one of my favorite dances of the season and I have watched it over and over again. It is so compelling. It is when all of us siblings get together and basically have a 3 day party. It was so much fun. Thanks Dad and Darla for all that time and effort you put into planning and making thing happen. We are lucky that you care enough to get us all together. Also, our camera has been broken for a while now, hence all the posts without pictures. I am very proud to announce that we bought a new one! I was looking online and different quotes and tying to find one that was describing how I was feeling. Here is what I found: </p><p>"Love the moment. Flowers grow out of dark moments. Life is a succession of such moments and to live each, is to succeed." - Corita Kent. </p><p>Things don't always go as you plan, but they always seem to work out for the best and the way that they are suppose too. We get so caught up in our darkness, that sometimes we don't open our eyes to see the flowers that have come out of it. We forget to look at the blessing that are there infront of us while we are going through our trials. </p><p>I feel that lately I have been so caught up in my own "darkness" That I have forgotten to see how truly blessed my life is. Don't take this the wrong way, I am not depressed or anything wierd like that, but there always seems to be some sort of personal trial that we are faced with. Something that we are going through that tries our faith and we have to remember what is truly important and that it will work itself out in its own way. That we will live through these moments and be better for it. I really have so many amazing things to be thankful for. I have a wonderful family, amazing husband, great friends, the gospel, the cutest nieces and nephews on the planet and million other things that I could name. As I said before, Flowers come out of dark moments and I have the most beautiful ones of all.</p><p>If your read all of this you are a champ! It was ok, but I wasn't very creative and didnt really try new recipes. It could have been because the stuff I wanted to start with was a bit more pricey and hard, but none the less I just didn't love cooking. Then I started watching the Rachael Ray show and learning that a lot of the stuff she was cooking was pretty simple and good on my pocket book. All of a sudden I had this great passion for cooking. Who knew? I love to cook now. I love just looking through cook books and I live to watch the food network channel. It is just so much fun. So, through this discovery I have found so many chefs that are just amazing! One of my favorites is The Barefoot Contessa. My cousin introduced me to her, and I am obsessed! So last friday I decided to make her recipe for Mexican Chicken Soup and Jalapeno Cheddar Cornbread. It is our new favorite thing. Its really not expensive and it makes tons of food, so you can definitely freeze it. The cornbread is amazing. You don't even have to add the other stuff if you don't want. Rub with olive oil, sprinkle with salt and pepper, and roast for 35 to 40 minutes, until done. When the chicken is cool enough to handle, discard the skin and bones, and shred the meat. Cover and set aside.<br /><br />Meanwhile, heat 3 tablespoons of olive oil in a large pot or Dutch oven. Add the onions, celery, and carrots and cook over medium-low heat for 10 minutes, or until the onions start to brown. Add the garlic and cook for 30 seconds. Add the chicken stock, tomatoes with their puree, jalapenos, cumin, coriander, 1 tablespoon salt (depending on the saltiness of the chicken stock), 1 teaspoon pepper, and the cilantro, if using. Cut the tortillas in 1/2, then cut them crosswise into 1/2-inch strips and add to the soup. Bring the soup to a boil, then lower the heat and simmer for 25 minutes. Add the shredded chicken and season to taste. In a separate bowl, combine the milk, eggs, and butter. With a wooden spoon, stir the wet ingredients into the dry until most of the lumps are dissolved. Don't overmix! Mix in 2 cups of the grated Cheddar, the scallions and jalapenos, and allow the mixture to sit at room temperature for 20 minutes.<br /><br />Meanwhile, preheat the oven to 350 degrees F. Yesterday in primary we were learning the 3rd verse to the hymn How Firm A Foundation. I have had this song memorized since I was a teenager. It was one of my moms favorite hymns and today I really understood why. There is such a power in the words of these verses. I think that sometimes in life we feel like we are all alone and that nobody understands what we are going through. The savior does know what we are going through. In this verse of the song he says, " Fear not I am with thee, oh be not dismayed. For I am the God and will still give the aid. I will strengthen thee, help thee, and cause thee to stand. I can't believe that it is already here. It feels like it came so quickly in some aspects. I remember when we were first married, people would say "Oh, so you are just newly weds. Isn't that great. I remember that phase. Don't pass through it to quickly." Well, it has come and past now and I can truly say that it has been an amazing 5 years. I am married to the kindest, sweetest, most loving man in the whole world. He is my rock. He is always helping me to become a better person. He is my shoulder when I need to cry. He is my sounding board when I am frustrated. He is also my voice of reason when I just can't see the big picture or don't want too. He is such a hard worker. His love for the gospel is unwaivering and his testimony strong. I am so lucky to be married to such a wonderful person. </p><p>So, now that I have gotten all my mushiness out I will tell you what we did this weekend. Friday, was the big day. So I got up and Eric made me breakfast, My favorite french toast. Then I went and get a pedi and my make up done at my fabulous work! Thanks Ashlen and Megs! You made me feel so beautiful. Then I went home and Eric and I ventured out to see the movie Twilight! On our way there though we had to make a detour. He came out of the store with the most beautiful flowers! I am so LUCKY! He totally pampers me. Then we rushed over to the movie. After our movie, we made the journey up to Deer Valley and stayed at the Stein Erikson Lodge. It is so gorgeous there. We had such a gorgeous view from our room. We ate at there amazing restauraunt. So Fantastic!!! Then we got up the next morning, lounged around, enjoyed the amazing view and late check out. We were very sad to leave but we will definitely be back there! So, all in all our 5th year anniversary was a huge success! Here are some pictures of our great time! It was really fun and the kids were pretty good. We did some fun activities, watched lots of movies, did homework, colored lots of pictures and made cupcakes with frosting. All in all, I still want to have children, the kids are alive and the parents were happy.<br /><br />Now here comes the explanation for the title of this post. We woke up Saturday morning to a winter wonderland. Overnight it had already snowed a good 10 inches. The snow did not let up at all. It snowed all through the day and then into the night. Cars were barried, driveways covered and plowed several times. The happy side to this madness were the looks on my neices and nephews faces. They played and played all day long. They made tunnels and snowmen, and came in side to get warm with some hot chocolate. Rosy cheeks and rudolph red noses, didn't stop them from playing. Since we had now where to go, it was actually kind of a great day. It felt like it should be christmas already. I guess that we should get through halloween first. All in all we recieved about 22 inches of snow! Standing there I could see she wanted and needed to cry. I haven't really had a lot to write about until recently. So here goes nothing... This weekend has been a bit of an emotional weekend for my sisters family. On saturday, her neice, little Lacy Jae passed away. What a sad thing to have happen. She was only 16 months old. She has had a lot of health problems since she was born and then things just kept getting more and more complicated. She was born with a big heart and lungs that did not work. She passed away saturday night. I was able to go to her funeral yesterday and I must say that I was truly touched. What a sweet and amazing family this little girl was born in too. They just loved her and cared for her unconditionally. They have such an amazing perspective on the plan our Heavenly Father has for us. How grateful this made me for my family and for the amazing gifts that I have been given in my life. I have a wonderful husband, who I love more than anything and who loves me in return. I have an amazing family. They are such strong examples to me of how to live life to the fullest. They are always loving me and supporting me and I am so grateful for them. We always seem to be there for eachother no matter what the circumstance is. I have been truly blessed in life with the things that matter. My heart goes out to Mike and Joy. When I first read the series I just couldn't stop reading and this one I couldn't seem to make myself pick it up. After finally finishing it I thought it was alright, but definitely not her best one. I have been gone every other weekend this summer and finally this weekend I am at home and I am rather excited to relax and do nothing. <br /><br />We have recently decided to start renting movies from Red Box. I love it! What a great invention. So far I have watched movies that I wasn't dying to pay a lot of money to see. Recently I viewed the Bucket List. I loved that movie. It has quite an interesting story to it. It made me think of how we have people come in and out of our lives that are made to be there for us. We have wonderful opportunities to meet different people and they all seem to leave an impression on us whether for good or bad. Life is funny that way. I am so glad that I have so many wonderful people in my life that have definitely helped me to be a better person or help me through times that are hard. Yes, I am sappy I know. Thats what this movie invoked in me. <br /><br />I just though I would share my thoughts about that. I will update all my summer happenings soon.
